"Penedès Reserva Cava with 15 months on lees: fresh, creamy, and elegant, with notes of yeast, pineapple, and banana."
Description
Lacrima Baccus Reserva Brut is the flagship cava of Cavas Lavernoya, a winery with roots in the Penedès dating back to 1890, when the Raventós Poch family produced their first bottles of natural sparkling wine using the champenoise method. The Lacrima Baccus brand reached its peak recognition in 1918 and has remained one of the most accredited in the cava market. Made with the classic blend of native varieties Macabeu, Xarel·lo, and Parellada, harvested and vinified separately to preserve the identity of each grape. The process includes grape destemming, paste cooling, pneumatic pressing, must selection, static settling, and alcoholic fermentation in stainless steel. After blending the base wines, the second fermentation takes place in the bottle followed by a minimum aging of 15 months on its own lees, double the minimum required for the Reserva category. Pale yellow in color with delicate bubbles and creamy texture, it offers on the nose notes of yeast and confectionery with a subtle background of fruit like pineapple and banana. On the palate, it is fresh, balanced, and elegant, with a persistent finish.
