"Cabernet and Merlot from the Yerri Valley: powerful, mineral, and long, aged in concrete and French oak."

Description
Ars Mácula is the flagship red wine of Compañía Vitivinícola Tandem, a winery founded in 2003 by winemaker Alicia Eyaralar and José María Fraile in the Yerri Valley, northwest of the D.O. Navarra, at an altitude of 600 meters. Its name comes from Latin, where mácula means stain, interpreted as unforgettable memories or sensations. It is made with a blend of Cabernet Sauvignon and Merlot in similar proportions, from the 22 hectares of own vineyards cultivated with minimal intervention viticulture, without herbicides or pesticides. The grapes enter the winery by gravity, undergo cold pre-fermentation maceration, and ferment at 30-32 °C without pumps with pigeage to obtain fine tannins. The wines are racked by gravity into underground concrete tanks where they complete malolactic fermentation and stabilize and clarify naturally for a minimum of 24 months. They then spend 18 months in 300-liter French oak barrels. The result is a powerful, concentrated, and mineral wine, with aromas of black fruit, balsamic tones, and scrubland, and a long, earthy palate that reflects the cold climate of the Yerri Valley.
