Description

Dulce Enero Ice Wine is a sweet wine produced by Bodegas Altolandon in the D.O. Manchuela, Castilla-La Mancha. Made from Petit Manseng grapes grown in one of the highest vineyards in Spain, this wine is produced only in exceptional years when temperatures drop below -5°C for at least five consecutive days. The harvest is done manually in January, collecting the frozen grapes that are quickly pressed in the vineyard to maintain the ice crystals, which concentrates the sugars and acidity of the must. The fermentation, carried out with native yeasts, is a slow process that can last between 2 and 3 months in small stainless steel tanks. The result is an amber-gold wine with intense aromas of tropical fruits, peach, apricot, citrus, and a hint of spices. On the palate, it has a dense texture balanced by refreshing acidity, with a concentration of flavors that linger in a medium-long finish. Ideal for pairing with foie gras, blue cheeses, Iberian ham, desserts, ice creams, cheesecake, or sponge cakes, glazed apricots, and coconut milk desserts.
