Sensal Blanco

Sensal Blanco is the village white of Javi Revert's project, made from native Valencian varieties grown in high-altitude plots on limestone soils in La Font de la Figuera. The vineyards, aged between 35 and 50 years, are farmed organically with minimal intervention, promoting the surrounding biodiversity. Harvesting is manual, and fermentation is carried out with native yeasts. The wine ages for 10 months mainly in clay jars, with 15% in used French oak barrels, adding texture and volume without masking the varietal expression. The result is an ethereal and floral white, with a marked mineral character typical of its high-altitude limestone soils, vibrant acidity, and a refreshing, long finish.
